I am a sake adviser, and Kurosawa is always my go-to sake. This sake is made in a traditional method "Kimoto" which introduces natural lactic acid bacteria during the brewing process. In this method, it takes twice as long to make the yeast starter than regular sake. Only 2% of the whole sake production is made by Kimoto Method since it takes more time and labor. This sake is earthy and full-bodied yet smooth.
