What Are the Austin Hope Winemaking Notes?
Austin Hope's winemaking process is reflective of the outstanding wine products they offer. After harvesting, Cabernet Sauvignon is fermented separately from other grapes for a minimum of 11 months. It is then put in a range of oak barrels for aging. Firstly, it is matured in French oak barrels that are 10% new, 25% once used, and 65% two to three times used. The blend is then further aged at least three more months in 75% new and 25% once used French oak barrels. With the 2020 vintage, the Cabernet Sauvignon wines were aged in oak for about twenty months total and racked twice in the process. The final maturation was then done to give the wine a gentle cross-flow filtration. The wine was then bottled in January 2020.
